Having stated that, the most simple conclusion is that 1) fermented bread products produce multiple VOC’s that will give a positive breath result (the most notable VOC is ethanol) and 2) fresh baked bread appears to have the highest concentration of VOC’s compared to older bread.
It seems that the amount of VOC from a fermented bread product contaminating a persons breath sample would depend, at least, on 1) the concentration of VOC’s in that bread 2) the amount of residual bread in the person’s mouth 3) the length of time the bread was in the person’s mouth.

The infra-red absorption spectra of fourteen organic compounds, including seven alcohols and seven miscellaneous compounds, have been studied in the region from 1μ to 7.5μ. The bands in the region from 1μ to 3μ have been classified as overtones or combination bands20of the assumed fundamental bands for the alcohols at about 3.00μ, 3.4μ, 6.8μ, and 9.8μ. By the use of Sappenfield's work for the region from 1μ to 2μ and that of Weniger from 7.5μ to 10μ and the present work a fairly complete idea of the infra-red absorption spectra of the alcohols has been obtained. The intensity relations have been discussed briefly and it was shown that they were in general in accordance with combinations attributed to the different bands. The bands of the miscellaneous organic compounds have been classified, but all the bands have not been included as only the fundamentals at 3.4μ and 6.8μ were used. A probable reason for the similarity of the infra-red spectra of many organic compounds in the region from 1μ to 3μ has been suggested.

Breath Alcohol testing discrminates against people with small lung volumes such as women[PDF] Description: A long string of peer-reviewed research from Dr. Hlastala's boratory at the University of Washington has led to the conclusion that the alcohol breath test is biased against subjects with smaller lung volume. This bias is caused by the fact that exhaled alcohol changes it’s concentration as it passes form the alveoli to the mouth. This is caused by the interaction of alcohol in the air with the mucosa of the pulmonary airways. During exhalation the alcohol concentration continues to increase is long as exhalation is proceeding. The basic assumptions of the alcohol breath test (as currently used) are invalid.
This document is a copy of the latest peer-reviewed paper in his series of studies. The net result of this study is that the rise in alcohol concentration during exhalation means that people with smaller lung volumes must exhale a greater fraction of their available breath volume to fulfill the minimum exhaled volume requirements of all breath testing instruments. An individual with a smaller lung volume must exhale further into the rising alcohol concentration before a breath sample can be taken.
Dr. Hlastala's report shows that this is true comparing individuals with large lung volumes and those with small lung volumes. The effect is greatest when comparing large subjects with small subjects of the same race and gender. It is weaker when comparing males and females. The effect is minimal when comparing African Americans with Caucasians. The effect has yet to be evaluated for Latinos (having smaller lung volumes) or other racial groups.
